this sorbet is surprisingly distinctive, both in color and flavor. at first its taste is fresh and tangy, just like a tangerine, and then the second flavor is sweet in a warm way, kind of a roasted or earthy sweetness. i have to think of a better description. it's definitely just the right amount of sweetness to balance the tang. i used this recipe with a few variations. i halved all measurements. i ended up juicing five tangerines to yield 1 1/2 cups juice and i also juiced one blood orange, which boosted the color nicely. blood oranges are so gorgeous. i would have garnished the finished sorbet with the candied zest but i ate it last night after the syrup cooled. i put the juice + syrup in the refrigerator overnight to cool and made the sorbet first thing this morning, which is a great way to start the week.
