Eggplant Recipes
This weekend I went to "Your Dekalb Farmers Market: A World Market" and bought a nice looking eggplant. Now I'm looking for some good eggplant recipes to supplement my old standbys.
I'm a singleton so recipes that store well and result in good leftovers are especially welcomed.

God, I used to love the Dekalb Farmers' Market! There used to be a guy there who had an alligator or monitor lizard or some kind of huge reptile like that in a cage in his booth. Seriously, WTF? I once saw it eat a live chicken. Or maybe it was an eggplant...?

Yeah, DKFM is always an experience. I'm a bit bummed that they don't have more locally grown food, but hey, the selection is great. The seafood area is kind of like going to the aquarium only you can buy the stuff swimming around, take it home, and cook it.
And yet no recipes....

i'm sorry but i think eggplant is nasty. pretty to look at...but i can't eat it. too mushy.
